If you prefer a gluten free diet like we do in our house, you’ll agree it can be challenging to find a gluten free bread that’s like bread and not like a cake!
So it’s always an exciting discovery when I come across a really great alternative to bread. I picked up a box of The Protein Bread co’s Protein Bread Mix recently and was wrapped with it!
Made from lupin flour, whey protein, golden flax meal, pea protein, linseeds, almond meal, baking powder, chia seeds and cinnamon this bread was an absolute winner.
It was so simple to prepare…
You just need to add 4 egg whites (or and 120gms), salt and water and leave to sit for 30 mins.
Stirring occasionally, so the chia seed can work their thickening magic. By the time 30 mins is up the mixture will be thick and stick the spoon.
Pour the mixture in and sprinkle with your favourite seeds or nuts. Place in the oven (180c) for 55-60mins.
And might I add, the smell of this loaf cooking away, filled the house with the most amazing baked goodness smell. Yum!
